I’m not a morning person at all. I try and get up as late as possible in the mornings, and even then I take as little time as possible getting ready before walking out the door, so I don’t bother with any morning tasks (like straightening my hair or doing my make up) that take time and aren’t as essential. For this reason, I’ve never been much of a breakfast person. I’ve found that I can’t work out in the evenings (around 6) if I’ve had a late lunch, say about 2 or 3pm.
I realise the importance of breakfast now (see here) as it’s the first meal of the day and it gives me energy to function at work until lunch time. I usually have my breakfast at my desk at work, but the problem is when I’m still eating and my work phone rings. With the weather getting warmer now in Edinburgh, I’ve been in the mood to make something more refreshing for breakfast and thought about making banana-free milk-free smoothies because of my fruit and lactose intolerance. I came across a recipe from the blog Sweet Hersey Living which fit the bill. I was able to turn this smoothie into a vegan-friendly, lactose/dairy-free recipe which I am very pleased to share with you!
Over the last few years, I’ve noticed that my lactose and fruit intolerance had grown to encompass more fruit and dairy products that I’ve now had to cut out of my diet. I’m now leaning towards more vegan dishes while occasionally eating meat dishes when eating out or having dinner with the in-laws. It’s not easy having a food intolerance and I can fully appreciate the difficulties people with food allergies and strong reactions from an intolerance live with on a daily basis.
As with any recipe, when you’ve found one that sounds great, you can always substitute ingredients that don’t work for you or that you’re not too fond of. Most recipes use particular ingredients for their properties (ie thickening, rising or flavour), but a little research on good ol’ Google shows that there are almost always substitutes (like Follow Your Heart’s VeganEgg instead of using chicken eggs – you can get this on Amazon or Real Foods).
I had a good look around for smoothie recipes, but because of my struggle with bananas and dairy products, recipes that used either banana or yoghurt as thickeners were a real problem for me…until the OH reminded me about soya yoghurt. I don’t buy yoghurt much which is how I managed to completely forget that Alpro makes all sorts of plant-based food products, including soya yoghurt and single cream. Problem solved!
For a refreshing breakfast smoothie, I decided to use a bag of mixed fruit (strawberries, blackberries, cherries, raspberries, blackcurrant and redcurrant) with oats as a filler and apple juice for a liquid sweetener. You can use any juice you like to balance out the thickness of the yoghurt or use water if you prefer. You can also skip the oats for a gluten-free smoothie recipe.

Vegan mixed fruit smoothie
1 cup fruit of choice (frozen or fresh)
1/2 cup rolled oats (optional)
1/2 soya yoghurt
1 cup liquid (I used apple juice, but you can use any fruit juice or water)
Sweetener of choice (optional)
1. Measure out the fruit and add this to a measuring cup or jug, or place it in your blender.
2. Next, measure the liquid and add this to the fruit.
3. Add the oats
4. Now add the yoghurt
5. Using a blender or a hand/stick blender, pulse or blend all the ingredients until smooth.
There is no right or wrong way to adding the ingredients, you can always add the dry ingredients first and the liquids last, or blend the dry ingredients with either the liquid or yoghurt first before adding the rest of the liquid later. The aim is to end up with a thick, smooth drink.
Mixed berry and oats smoothie
I’ve been making an effort to be more mindful of what I eat and drink instead of reaching for sugared confectionery, drinks and biscuits whenever I’m in the mood to munch on a snack, but I’ve also been a bit wary of healthier options. I have a really sweet tooth so anything that included healthy options with lots of fruit and vegetables used to scare me off. I’m pleased to say this smoothie definitely is healthier but still satisfies my sweet tooth cravings. The sweet flavour from the berries, yoghurt and apple juice gives it just enough sweetness not to need any additional sweeteners added. If you wanted it sweeter, you can always add your sweetener of choice – the amount will depend on how sweet you’d like this to be.
